Seafood pie!

This weekend we went and visited our good friends M & A in London! It's always a great time whenever the 4 of us are together... Good food, drink, food... More drink!
We arrived on Saturday evening and A decided to make us seafood pie for dinner. Now... I'm not much of a fish eater, at all, but this was amazing, I may be converted! And she was kind enough to let me share the recipe with you lucky lot!
You will need:
- a handful of spinach
- 2 garlic cloves, chopped
- a handful of dill, chopped
- 1 tsp chilli flakes
- 2/3 potatoes
- a selection of seafood (enough to cover the base of your dish nicely)
- a dash of olive oil
- salt and pepps
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- a dollop of butter
1. Preheat your oven to 200 degrees. Peel the potatoes and chop. Then pop into a saucepan of boiling water for ten minutes.
2. In a dish, put your seafood, the garlic, olive oil, lemon and lime juice, chilli flakes, dill and salt and pepps and give a good mix to combine. Place the seafood mix in the oven for 5 minutes.
2. Meanwhile give your spinach a good wash and lay flat at the bottom of a pie dish.
3. Take the seafood mix out of the oven and spread it evenly over the top of the spinach.
4. Take the potatoes off the boil and drain the water, add a dollop of butter and then mash until smooth and creamy.
5. Spread the mashed potatoes over the seafood and spinach and smooth out over the top so it's nice and flat.
6. Pop it in the oven for another 20 minutes and it's ready to eat!
