Gluten Free Gnocchi

I hope that you all had a fabulous time, whatever you did to see in the new year!
Right, now that is out of the way I have something exciting to share with you all! Miles got some gluten free gnocchi as one of his stocking fillers this year and it was yummy!
For those of you that don't know what gnocchi is, it is a potato dumpling that you can use in place of pasta. It is delicious, and there are lots of different things ou can do with it such as adding some pesto to coat them, or simply just a sprinkle of Parmesan. The gluten free version we tried is very similar in texture to the rice cakes we had in China which was lovely. I suppose it would be made in a similar way with rice flour!
We couldn't wait to try it out and this is what we did with it:
All I did was make my tomato base (recipe here), added some courgettes (steamed for 3 minutes in microwave), and added the cooked gnocchi. (And maybe a cheeky glass of red wine too, because it's christmas).
Preparing the gnocchi was straight forward... All of have to do is bring a saucepan of water to the boil, add the gnocchi and wait for them to rise to the top.
Overall the meal was a success! There was more than enough gnocchi in the packet for two people, and it was sooo easy and quick to make.

I've been looking for some gluten free gnocchi!!! Where did you find this? Looks delicious!
ReplyDeleteHi Paige! I had been too, however unfortunately the person who gave it to Miles couldn't remember where they got it from. I will keep my eye out though and if I find any I will let you know :)
