Cauliflower and Broccoli Cheese Mmmm!

So, Miles and I are making a big effort to eat more vegetables at the moment and it’s not going too badly actually! The other evening I made us a cauliflower and broccoli cheese. I have always loved cauliflower cheese… I remember as a very young child having the smell of cheese sauce wafting through the house after a hard day at school ready for our dinner! Mmmmmm! My favourite! This recipe is the closest I have got to my childhood favourite with a pop of colour added into it with the broccoli and it’s not only an easy meal but very satisfying… I am not even going to think about the calories here as it is pure comfort food but it must be better for you than mac and cheese?

- 1 broccoli
- 1 cauliflower
- 120g cheese (grated)
- 50g gluten free plain flour
- 50g butter
- 1tsp mustard powder
- 500ml milk
- 5 table spoons Boursin (or your favourite cream cheese with herbs)
- Salt and pepps
Method:
- Pre- heat your oven to 200 degrees. Now wash your cauliflower and broccoli and cut into manageable florets. Pop into a large saucepan with salted water and boil for around 10 minutes.
- Meanwhile melt the butter in a medium saucepan. When it is completely liquid, add the flour and stir keeping it on the heat, for about a minute.
- Now, take the mixture off the heat and add a little of the milk and stir until it has been absorbed. Add a little more of the milk and keep going like this until the sauce is watery again (and lump less) and then just add the rest of the milk.
- Return the sauce to the heat; keep stirring constantly until the sauce thickens. Once this happens remove from the heat and add all of the cheese but a handful. Stir the sauce until the cheese has melted and then add your Boursin to the sauce, stir this again until it has all melted. Add some salt and pepps to taste.
- Now your veg should be ready, drain well and place into a large baking dish and pour over the sauce. Mix well so that all the veg is covered, then put the remaining cheese on top. Bake in the oven for about 30 minutes and serve. Yummy!
