Not quite Hunter's Chicken

Whilst Miles and I were house sitting for family we decided to treat it as a mini break and with that came some proper comfort food. My fave dish had to be the 'Not Quite Hunter's Chicken'. Traditionally Hunter's Chicken is made with chicken wrapped in bacon with a BBQ sauce and cheese to top it off... I did mine slightly differently but it was still very lovely. This recipe makes enough for two people.

You will need:

  • 4 bacon rashers

  • 2 chicken breasts

  • Boursin (about 3 tablespoons)

  • 3 medium sweet potatoes

  • 50g Red Leicester Cheese (or Cheddar will do too)

  • 2 cloves of garlic

  • Salt and pepps

Method:

  1. Pre-heat your oven to about 200 degrees. Peel and wash your sweet potato and garlic cloves. Chop the potato into small cubes and pop them in a large saucepan with the garlic and cover with water (I pre boil the water to give it a little head start).

  2. Butterfly your chicken breast so it is as flat as you can get it. Take about 1 1/2 tablespoons of Boursin and put it close to the edge of the chicken breast. Roll the Boursin up into the chicken like a cigar, repeat for the other breast.

  3. Take your bacon rashers and wrap the chicken breasts up with them, like a blanket. Once this is done, put them on a baking tray and cook in the oven for about 20-25 minutes.

  4. Just before your chicken is ready, test one of your potato cubes to make sure it is cooked. When happy drain the water away and mash the potato and garlic together. Once it is all mashed, add the Red Leicester and mix it all up.

  5. Now to plate... I put the mash on the plate and then put the chicken on top of it because I wanted it to look fancy but it really doesn't matter how it looks as it tastes deeee-lish, add salt and pepps to taste and enjoy!
